Sandals Resorts has revealed an extensive lineup of new food and beverage experiences set to debut across three of its flagship Jamaican properties as part of a US$200 million redevelopment project.

The hospitality company on Wednesday detailed a range of new restaurants, rum bars, coffee shops and beach clubs that will be introduced at Sandals Montego Bay, Sandals Caribbean Cay and Sandals South Coast, with a strong emphasis on local ingredients, Jamaican culinary traditions and immersive guest experiences.

"Our culinary evolution continues to celebrate the flavors, stories and culture of the Caribbean," the company said in announcing the new concepts.

At Sandals Montego Bay, guests will be welcomed with Jamaica's famous Blue Mountain coffee at the new BLŪM coffee shop, while a new lobby bar is expected to enhance the arrival experience.

Among the most anticipated additions is Bay Roc Rum Bar, which pays tribute to the historic Bay Roc Hotel & Villas that occupied the property before it became a Sandals resort. The venue will feature Jamaican music-themed décor, local artwork, memorabilia and a curated vinyl collection.

The popular Buccan restaurant concept, first launched at Sandals Saint Vincent in 2024, will make its Jamaican debut at the resort. Located on the waterfront, the family-style dining experience will showcase dishes inspired by Jamaica's parishes and culinary traditions.

A new Parisol Beach Club will serve as a social hub combining dining, cocktails and beachfront relaxation. The venue will include the resort's first swim-up pool bar, a Jerk Shack and a made-to-order pizza station.

Additional dining concepts debuting at Sandals Montego Bay include seafood restaurant Scrimshaw, casual eatery Heart & Sol and Tesoro, which will offer international cuisine during the day and Italian fare in the evening.

At Sandals Caribbean Cay, one of the standout additions will be Suppa, a supper-style restaurant inspired by the Jamaican tradition of gathering for Sunday dinner. The concept is designed to resemble a Jamaican home and will feature shared set-menu dining experiences rooted in local flavors.

"Caribbean food is having a moment right now," said Luke Mathot, Sandals' Vice President of Product Innovation, Food & Beverage. "We're taking inspiration from dishes that have been part of Jamaican culture for generations and interpreting them through a contemporary lens."

The resort will also introduce Keynote Rum Bar, a pre-dinner lounge serving Caribbean rums and small bites, while Parisol Beach Club will debut on the resort's private offshore island.

Other additions at Sandals Caribbean Cay include The Strand beach grill, BLŪM coffee shop, Heart & Sol and Tesoro. Existing favorites such as Bombay and The Cricketers Pub will remain part of the resort's dining offerings.

Meanwhile, Sandals South Coast will add BLŪM coffee shop and introduce Butch's Island Chop House to Jamaica's south coast for the first time. The steakhouse will be paired with a dedicated martini bar and offer premium cuts of meat and fresh seafood.

The resort will continue to feature several established restaurants, including Jasmine's, Schooners, Neptunes, Sushi on the Sand, Bayside, Giuseppe's and Jerk Shack.

In early 2027, Sandals South Coast is also scheduled to debut B-Side Rum Bar, a second-floor lounge inspired by the hidden "B-side" tracks of vinyl records. The venue will feature craft cocktails, small plates and panoramic views.

The redevelopment timeline will see Sandals South Coast reopen on November 18, 2026, while Sandals Montego Bay and Sandals Caribbean Cay are scheduled to welcome guests back on December 18, 2026.

The upgrades form part of Sandals' broader strategy to elevate its culinary offerings while showcasing authentic Jamaican culture and hospitality to visitors from around the world.
