How to make Bajan fishcakes

Have you heard about the Bajan-style fishcakes? Fish cakes are one of the country’s favorite appetizers at restaurants, finger food at cocktail parties, and even breakfasts.

While fishcakes are common in other cultures, there is something special about these light and airy cakes prepared in Barbados. They are often served with bakes, a type of bread that is made from fried flour, salt, and water.  However, some Bajans enjoy when fish cakes are sandwiched in a “salt bread”, this is called a “bread and two”.

If you want to try this simple finger food, here is a recipe for you.

Ingredients needed

  • 1 onion, diced
  • 1 cup flour
  • 1 tsp baking powder
  • 1 egg lightly beaten
  • 1 small hot pepper, finely diced
  • chopped parsley, thyme, and marjoram
  • 1 lb boneless, skinless salt cod
  • 1 cup water

Steps to take when making Bajan fishcakes

Step 1: To prepare the salted cod, boil in six cups of water for four minutes. Throw off the water and boil it a second time for three minutes. Flake the fish with a fork.

Step 2: Combine the flaked fish with the other ingredients in a bowl. Stir until a thick batter forms. You can add more water or more flour if desired.

Step 3: Drop the batter by teaspoonful into oil over medium heat. Be careful not to overcrowd the pan. You may need to turn the heat down to medium-low if the fish cakes are burning before being fully cooked.

Step 4: Drain on paper towels. Fish cakes are best eaten hot!

Step 5: Fish cakes are even more delicious when dipped in sauce such as the traditional Barbados pepper sauce or Marie Rose sauce, combining mayonnaise, ketchup, and pepper sauce.
