Serve it after topping it with a dollop of whipped cream to accompany the spiced filling. For fragrance, add a touch of ground cardamom on top of the whipped topping. You can store the pie in an air-tight container in the fridge for upto 3 days. If you need to store it for longer, wrap the pie tightly and then freeze it. Allow it to thaw outside the fridge before serving.

Making pie from scratch requires some patience. Cooling down slowly gives the flavors time to combine, so do not hurry. If you want to increase the spice content, add more cardamom or sprinkle allspice slightly.

Please note: If you are using canned pumpkin, make sure to drain it completely.  Otherwise, water will moisten the fillings, making them thinner. Brush the pastry with a beaten egg before filling to prevent a rubbery base.
